In the tea gardens of Zhushan, Mr. Peng and his family continue the tradition of hand-picking and crafting tea through meticulous traditional processes. Mr. Hsu affectionately refers to this tea as "Beaujolais of Tea," eagerly anticipating its ever-evolving character each spring.

For this tea, Mr. Hsu recommends gradually increasing the steeping time by 1 minute for the second and third infusions.
